Who actually needs Latin translated
Not students. The Latin documents that reach us are real records that happen to be written in it: parish baptism, marriage and burial registers, which are the backbone of citizenship-by-descent claims to Italy, Poland and elsewhere; older university diplomas, which European institutions issued in Latin well into the twentieth century; ecclesiastical decrees and dispensations; and notarial or land instruments from earlier centuries.

Abbreviations, hands and dates
Parish registers are handwritten, often in a compressed scribal hand, and heavily abbreviated: names are latinised (Ioannes for Jan or John), dates are written out in Roman form, and standing formulae repeat with only the particulars changed. Reading them is a skill distinct from knowing Latin.
We translate what is legible, keep the latinised form alongside the vernacular name where the document gives both, and mark anything genuinely illegible as illegible. On a document being used to establish descent, an honest gap is worth far more than a plausible guess — the whole claim rests on the chain of names being right.
